Savory Roasted Veggies

By far my favorite way to eat vegetables! This maple mustard sauce is easy and can be used on fresh or frozen veggies!

Ingredients:

  • 4-6 cups of vegetable options:

    • Butternut squash

    • Red onion

    • Sliced red pepper

    • Brussel Sprouts

    • Carrots

    • Broccoli

    • Yellow squash

    • Zucchini

  • 2 tbsp olive oil

  • 1 tbsp minced garlic

  • 1/3 cup maple syrup

  • 1/2 cup Dijon mustard

Directions

  1. Preheat oven to 400 degrees F.

  2. Slice and dice vegetables to about 1 inch pieces.

  3. If choosing butternut squash, brussel sprouts, red onion, carrots or broccoli (or any harder vegetable), spread onto cookie sheet. Sprinkle with oil, Italian seasoning, and garlic. Roast fo 15 minutes then remove from oven.

  4. In separate bowl, whisk together maple syrup and Dijon mustard.

  5. Toss the rest of desired vegetable onto pan with cooked vegetables. Drizzle syrup/mustard blend on top of all vegetables and toss until they are all covered.

  6. Roast for 15 more minutes. Enjoy!!
