Beet Risotto

This recipe is one of my favorites because the bright pink final product looks so cool! Trick those kiddos (and adults) into trying some beets, and liking them too!

Ingredients:

  • 2 medium beets, peeled and finely chopped

  • 2 tbsp olive or avocado oil

  • 1/2 chopped white onion

  • 2 tsp minced garlic

  • 3/4 cup uncooked arborio rice

  • (Optional) 1/2 cup dry white wine

  • 3 cups broth

  • 1/2 cup grated parmesan cheese

DIrections:

  1. Warm broth in small pot to the side.

  2. Heat oil in large pan and saute onions, garlic and beets until onions have turned translucent pink.

  3. Add dry rice and toss until rice is coated.

  4. Pour in wine if desired and stir until absorbed.

  5. Add one ladel of broth at a time, waiting to add more until the previous ladel has absorbed. Continue this until you have 1 ladel left.

  6. Add last ladel of broth, mix and then add parmesan cheese. Enjoy!
